Exposure:                                  Vineyards surrounding the estate facing south, on east-west direction

Altitude:                                     60-80 metres above sea level

Soil typology:                             Flysch consisting of stratified Eocene marl and sandstone

Training system:                        Unilateral and bilateral Guyot

Plant density:                            4000-7000 vines per hectare

Grape harvest:                           Last week of August

Vinification:                               Cryomaceration on skins for about 6 hours, static debourbage of the must

                                                and fermentation at a temperature of  15-16°C

Ageing period:                           Once decanted, the wine stays on fine lees for about 6 months

Bottling period:                          Second half of March                                                       

Organoleptic features:                The wine displays an incredible range of strong and peculiar aromas,

                                                with the characteristic flavours of fig,tomato leaves, pepper and herbaceous

                                                plants. It is well structured, tasty dry, full-bodied and persistent

Well-suited to:                           Ham appetizers and salted seafood dishes
